Proceeds the Gentian (2019)

On a cold and rainy April day in 2018 we brewed an Amaro-inspired sour/bitter beer together with the three brothers of Pen Druid Brewing (Virginia, USA). We added gentian root and Sicilian oranges to the coolship overnight, before barrel-aging it for fifteen months. Bottled July 2019. ABV:8% IBU:

Artemisia Absinthium (2020)

In our search for sour-bitter combinations, we infused a beer, barrel aged for about a year, with dried wormwood flowers from our garden. The beer itself was brewed with barley malt, raw wheat and aged hops. Bottled January 2020. ABV:6% IBU:

Analogia (Appel/Witte Druif) (2020)

A wildly fermented, barrel aged cider, made from untreated and handpicked local apples from high standard trees, fermented on the skins if Riesling, Müller-Thürgau and Muscat Grapes. Bottled May 2020. ABV:7% IBU:

Autonomia (2019/2020)

A wildly fermented cider made from untreated Belgian apples from high standard trees, barrel aged and infused with angelica archangelica, wormwood and red wine from our own vines. Bottled April 2020. ABV:7% IBU:

Sitopia (Appel/Rabarber/Vlierbloesem) (2020)

We added fleshly pressed rhubarb juice and elderflowers (one day of maceration) to a wildly fermented, barrel aged cider, made from untreated and handpicked apples from high standard trees. Bottled May 2020. ABV:7% IBU:
