Traversing Thoughts – Barrel-aged wild bitter ale with Spalt Select and Strisselspalt.
Traversing Thoughts is a collab with our friends from Kent Falls. We made a barrel-aged brett IPA with lots of wild yeast flavours and surprisingly little sourness for a beer that was aged for 21 months. Our wild house culture went nuts on the hops and transformed their aromas into a good dose of barnyard funk with outspoken fruity notes. The finish has a strong bitter taste that is rounded by the barrel.
